DEEP CHOCOLATE BISCUITS

Yesterday was so grey , cold and rainy the only way I could survive through the day was by making chocolate cake. I went for a little variant and made biscuits instead of cake. These are perfect with a warm cup of tea or coffee while watching Nigellissima in your bed ( Yup, that's what I did ...).

Serves: approx. 20 Biscuits                        Prep: 15 mins          Resting:2hrs                Cooking: 10 -12 mins

Ingredients:

  • 1 Egg Yolk
  • 100 grs of good quality chocolate (I used 85% Cocoa)
  • 50 grs of Sugar
  • 75 grs of Butter at room temperature
  • 1 good pinch of Baking Powder
  • 100 grs of Flour
  • 1 teaspoon of Vanilla Extract or Cinnamon Powder (Opt) 
  1. Melt the chocolate in a bain-marie or microwave
  2. Wisk the sugar with the butter
  3. Add the Egg Yolk then slowly add the flour 
  4. Mix together until you get a nice dough
  5. Shape into a roll 
  6. Cover in plastic film 
  7. Leave in the Fridge for 2 hours
  8. Preheat the oven at 180°C 
  9. Remove the film
  10. Cut the biscuits into 1 cm slices
  11. Cover a baking tray with baking sheet
  12. Put the biscuits in the oven to cook for 10 to 12 mns
  13. Once the biscuits are cooked leave them to cool 

*Note: It's important to leave the biscuits to cool, if you try to eat them while they're hot they will crumble in your hands.
